I have never tried this, but it looks pretty cool.  You can buy a Rotary Cutter Guide Arm for adding seam allowances to fabrics.  So you would trace the fabric with the guide arm, and the cutter would do the cutting at an even space away from the arm.  They're at the bottom of this page.
